TIPS FOR STAYING SANE AND HEALTHY AT CHRISTMAS!

Blood sugar is raised and lowered very dramatically over the festive season due to increased consumption of sweet sugary treats, lots of bread, and copious amounts of alcohol.  These all have the effect of sending our blood sugar rising and crashing which produces low mood and increased cravings for sugary foods.

To combat this try to eat a protein with every meal, for example a bit of hummus on brown bread or rye bread or oatcake.    The combined effect of the protein and carbohydrate will help balance your blood sugars and slow down the rate at which your food is broken down.

Another example is natural yoghurt and fruit – as a snack this can be a healthier treat. Try chopping up some berries or some pieces of apple and pear.   For a faster release of sugar into the bloodstream use grapes or bananas.

Peanut butter and almond butter on a rice cake can be a very filling snack and the protein content in the butters is high and loaded with nutrients and good fats.

In between all the feasting keep drinking water and eating fresh fruit and vegetables as often as you can – carrot and celery sticks with hummus before a mean can be a better alternative to crisps and heavily salted nuts.

Get out into the fresh air even once a day for a good walk and sniff the air!

Watch all the TV you want but take a break from it too and read your Christmas gift book and talk to your friends and family.

Theory of nutrition

As you may be aware by now many of you who read this website and blog would know that we communicate at many levels here in Sankalpa the philosophy of a non-medical approach to healing.  So when I think of the many theories of nutrition that I could put forward, like drinking eight to ten glasses of water is good for you.  Or perhaps I could also say that it is a well-established fact that eating lots of fruit and vegetables every day is good for your health.

There is a huge army of knowledge and statistics supporting this information.  Our aim as you can see is to give you lots of nutritional information and some recipes that are loaded with goodness and health giving properties and most importantly that these recipes are simple and easy to make and they taste good!

The philosophy of good nutrition has to address more than just food and what you put into your body.  Human beings are full of complexity and complications and it is very important to understand how uniquely individual each of us are.  We process food through physiological and biochemical processes that are determined by many factors.

This means that being too absolute and obsessive about food and what constitutes good health can be more of a deterrent to health than a positive force in your life.     We need to wear our nutrition like a loose piece of clothing – it fits well but does not constrict or restrict us.

If we think of the word nutrition and what it means, we have to look at what ways we nurture and nourish ourselves apart from what we put into our bodies.  Do we get nourishment and nutrition from the sunshine and being in the outdoors?  Would having lots of good conversations with people you like and who make you laugh influence how well the food you eat gets absorbed and digested?

For example if you are anxious and uptight and feel unable to sit and relax, it would make it more difficult for you to get the benefits out of the good food that you might be eating as your digestive system tends to shut down at these times which makes it harder for your body to work efficiently.

On the other hand if you are at ease and out with friends and sitting in the sunshine or at home in your favourite chair sharing a meal with someone you love – it may not be as important that every bite you eat is super healthy. It may be soul food which is the food that may not fit into the category of healthy, like chocolate, or a home made piece of cake lovingly prepared by someone especially for you.  It may be a simple toasted sandwich or a plate of chips but if you are really hungry and really at ease with yourself that might be the food that nourishes you most at that time.

Obviously if you feel good and nourished and nurtured inside yourself by people, books or movies or nature or your work – you will automatically be more inclined to eat food for sustenance and pleasure but not repeatedly for comfort and sedation and as a way to numb out all feelings.  We can use food in the same way as we use alcohol or illegal drugs or nicotine.  So think today about what nourishes you and remember that nutrition is emotional, mental and spiritual as well as physical.

Superfood of the month – Nuts

Nuts can get a bad press as they are associated with peanuts and salted nuts you buy in shops or munch on in bars while waiting for a meal or having a drink.  These are not very nutritious as they are full of salt and are highly processed.  For most people who try to lose weight it is always about reducing the fat content of their diet and this is where nuts get the boot!  Therefore it is important to say that human beings need good fats in their diet to help boost mood and keep joints lubricated.  Good fats also promote healthy nails, skin and hair.

In their raw state nuts are natural superfoods. If you don’t eat fish and want to get a boost of Omega – 3 fatty acids, look no further than a handful of almonds or one or two Brazil nuts or cashew nuts, which you can get, from health food shops or most large supermarkets. Just look for the pure unprocessed ones, without additives or salt.  Nuts are an excellent source of vegetable protein.  Almonds are a good source of calcium for those of you who avoid dairy foods.

Nuts are a versatile food and can be blended to form nut butters like almond butter and peanut butter.  These spreads are loaded with goodness and have a rich sweet flavour.  Spread almond butter over an oatcake or bagel or rice cake and you get the richness of that buttery taste as well as an energy-giving source of protein and fat.

As always when we eat omega 3 rich foods it can have a positive impact on our mood and because of the richness of the taste, it takes less of it to satisfy our hunger.  Nuts are also a good source of zinc, which is a good defence against stress.  Hazelnuts and almonds contain folic acid, which again is good for supporting the nervous system, which in turn can help reduce the intense low mood that can accompany depression.

Walnuts are great in salads and on cereals either finely chopped or eaten whole. Nuts are such a versatile food and can be a great alternative to meat or fish or a handy snack food to eat with a piece of fruit.

Lentil Bolognese

1 large carrot, grated

2 sticks celery, finely chopped

1 onion, chopped

2 cloves garlic, crushed

1 tin of chopped tomatoes

1 mug of red lentils

Olive oil

Optional: small glass of red wine

  • Cook the onion and garlic in the olive oil with the lid on until soft and transparent.
  • Add the grated carrot and chopped celery. Cook for 15 minutes.
  • Stir in the tomatoes (and wine) and season to taste with salt and black pepper.
  • Simmer for 20 minutes, then add the lentils.
  • Simmer for another 15-20 minutes or until the lentils are soft (they should still have a bit of bite)

 

Add a splash of water while cooking if the ingredients start to stick to the pan or dry out. You can serve this with pasta, or simply by itself. It’s tasty and filling and best of all – you won’t miss the meat!

Superfood of the month – Blueberries

Blueberries are one of nature’s wonder foods.  They are full of fibre and packed with juicy goodness and plenty of those antioxidants that we hear so much about.  That’s what makes them blue and purple in colour.  They are a great source of Vitamin C and this together with their exceptional antioxidant activity makes them qualify as a superfood.  A superfood is a food that can offer a multiple of health benefits by eating it.   

Some studies being carried out have shown that blueberries help protect the brain from oxidative stress and may reduce the effect of age-related conditions.   In plain terms this means that eating just a handful of these berries every day can help us improve our learning capacity and motor skills.  Another benefit is found in improved vision and protection against failing eyesight.  They are a traditional remedy for both constipation and diarrhoea.  They also can help eliminate urinary tract infections.  And finally they taste delicious!  Try them mixed with other fruits or on cereal with Greek yoghurt or ice cream (The Encyclopaedia of Healing Foods).

I was knocking around doing nothing in September 08 and had an apartment in town for four years prior to this story. It was in that apartment I slipped into a very bad habit of doing nothing and taking drugs. It was drink and cocaine that I was taking but then when the parties were all over I was left with a filthy flat smelling of drink and smoke. I then got offered to smoke gear, which I tried but really did not like. I already had a problem with tablets to relax me. It was when I was told about being able to buy molly (that’s the street name for it, methadone is the pharmacists name) so I didn’t think much of it but bought some and drank it. It was all grand until I realised I had gotten meself a problem with it. I started needing it. So I signed up for to get on a program to get something I had at one stage despised. 

I then just gave up my apartment and came back to my mother’s where I would not have been able to do half the things I done in my flat. At the same time I tried to stop taking the methadone and could not sleep for three days in my mother’s, and then with a lot of shame went and told my mother I had this problem. So she agreed to help me. I went up to the clinic and they took me on cause I had been on the clinic in town for four months and had a plan to get stable and start coming down off it. So as well as that I had to do something to keep my mind busy and to try to get a bit of structure in my life. I only palled with one mate and it himself that told me about this course that was called millennium but is now called Sankalpa.

It was there for the first time in 5 years I had a little structure in my life. I was getting up and going in and they were quite helpful, they made a plan with me to gradually get meself back to the way I was and off this methadone. Since I’ve been here I’ve come down 15ml – 5ml a month for the last 3 months, and they make out a plan to get your life outside Sankalpa back in order. So at present I am on the housing list, seeing my kid twice a week and feel great with the bit of structure back in my life. Cause I had been a worker before I fell into this rut. And getting up and out in the morning has been great and when I’m at my mother’s she loves it knowing I’m doing something and it’s helping me. My mother came down to the church to watch us play the drums, which is something I never would have done if I wasn’t in Sankalpa. I get to learn about computers and I’ve a lot of interest in the ceramics. I’m actually doing a portfolio so as that I can hopefully be ready by September this year to go to a college and learn what I don’t already know. I’m quite good with my hands and the ceramics is my favourite.

The money is good and helps a lot but it’s the structure and the getting clean that motivates me. I’ve signed up for the course in September so hopefully I’ll be ready and each different class is enjoyable. We get to try new things every day. Me myself I think it has given me a lot and I’m making progress. It’s quite good, the staff are quite good and the other clients are alright. Getting the structure back in my life was a really good thing for me. That is really important to me, not to stay in bed and miss half a day. When I get up and get into work it’s great. You get to socialize and they try to help you in every aspect of your life and I have a lot going since I joined and I never know what we’ll be doing tomorrow. Hopefully I’ll get off my methadone but slowly does it.
